  • 4 bone-in pork chops (1 inch thick)
  • 1 large ripe pear, diced
  • 4 oz Gorgonzola cheese, crumbled
  • 1 tbsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix diced pears, Gorgonzola cheese, and thyme.
  3. Pat the pork chops dry and create pockets by cutting horizontally through one side.
  4. Stuff each chop with the pear and Gorgonzola mixture. Secure with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Season the chops with salt and pepper and sear for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 15-20 minutes or until an internal temperature of at least 145°F (63°C) is reached. Let rest before serving.
