  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium carrots, diced (about 1 cup)
  • 2 stalks celery, diced (about 1 cup)
  • 1 large onion, chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Sauté diced onion, carrots, celery, and minced garlic in olive oil over medium heat for about 5 minutes until soft.
  2. Add the chicken breasts to the pot with salt and pepper; brown for another 5 minutes.
  3. Pour in the chicken broth and bring to a gentle boil while stirring occasionally.
  4. Stir in thyme and parsley; reduce heat and simmer for 25 minutes.
  5. Remove cooked chicken from the pot, shred it using two forks, then return it to the soup.
  6. Taste and adjust seasoning; serve hot with crusty bread or crackers.
