  • 3 ripe avocados (about 450g)
  • 1 cup cherry tomatoes, halved (150g)
  • ½ medium red onion, thinly sliced (50g)
  • ¼ cup fresh cilantro, chopped (15g)
  • 2 tbsp lime juice (30ml)
  • 2 tbsp olive oil (30ml)
  • Salt & pepper to taste

Instructions

  1. Halve the avocados, remove the pits, and scoop the flesh into a mixing bowl. Halve or quarter the cherry tomatoes.
  2. Add sliced red onion, chopped cilantro, and lime juice to the bowl. Drizzle with olive oil and gently mix with a fork while maintaining some texture.
  3. Season generously with salt and pepper to enhance the flavors.
  4. Chill in the refrigerator for about an hour before serving to allow flavors to meld.
  5. Serve in a bowl or on a platter, garnished with additional cilantro.
