Classic Beef Bourguignon is a classic French stew that brings together tender beef, rich red wine, earthy mushrooms, and sweet pearl onions.   • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 slices bacon, diced
  • 1 cup pearl onions, peeled
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine (Burgundy or Pinot Noir)
  • 2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C). In a large Dutch oven, cook the diced bacon over medium-high heat until crispy. Remove the bacon and set it aside.
  2. Sear the beef cubes in the bacon drippings until browned on all sides; set aside.
  3. Sauté chopped onions and minced garlic in the pot until fragrant. Add sliced mushrooms and cook until golden brown.
  4. Return the beef and bacon to the pot. Stir in tomato paste, thyme, bay leaves, wine, and broth until the meat is submerged. Bring to a simmer.
  5. Cover the pot and transfer it to the oven. Cook for about 2.5 hours or until the beef is fork-tender.
  6. Remove from oven; discard bay leaves and stir in pearl onions. Adjust seasoning with salt and pepper as needed.
