  • 2 lbs chuck roast, cut into 1-inch pieces
  • 4 slices thick-cut bacon, chopped
  • 1 cup pearl onions
  • 3 large carrots, sliced
  • 8 oz cremini mushrooms, halved
  • 4 cloves garlic, minced
  • 3 cups full-bodied red wine (such as Burgundy)
  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the chuck roast and seasoning it with salt and pepper.
  2. In a large Dutch oven, cook the bacon over medium heat until crispy; remove and set aside.
  3. Sear the beef in batches in the bacon fat until browned on all sides; remove from pot.
  4. Sauté pearl onions and garlic in the same pot until softened.
  5. Deglaze with red wine, scraping up brown bits; add beef broth and thyme.
  6. Return bacon and beef to the pot along with carrots and mushrooms. Simmer covered on low heat for about 2 hours until tender.
  7. Serve over mashed potatoes or with crusty bread.
