  • 2 cups mixed dried fruits (raisins, sultanas, currants, chopped dates)
  • 1 cup chopped nuts (almonds or walnuts)
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • Marzipan (optional)

Instructions

  1. Soak the mixed dried fruits in orange juice or brandy overnight.
  2. Preheat your oven to 300°F (150°C) and line a round cake tin with parchment paper.
  3. In a large bowl, cream together the unsalted butter and brown sugar until fluffy.
  4. Beat in the eggs one at a time until well combined.
  5. In another bowl, sift together the flour and spices, then gently fold this mixture into the wet ingredients.
  6. Fold in the soaked fruits and chopped nuts until evenly distributed.
  7. Pour the batter into the prepared tin and bake for about 2 hours or until a toothpick inserted comes out clean. Let cool on a wire rack before icing.
