  • 4 medium potatoes (800g), peeled and diced
  • 2 medium carrots (150g), diced
  • 2 stalks celery (100g), diced
  • 1 medium onion (150g), chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth (950ml)
  • 1 cup heavy cream (240ml)
  • 2 tablespoons olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Prep your vegetables by peeling and chopping the potatoes, carrots, celery, and onion. Mince the garlic.
  2. In a large pot over medium heat, drizzle olive oil and sauté onions and garlic until fragrant (about 5 minutes).
  3. Add diced carrots and celery; cook for an additional 5 minutes until slightly softened.
  4. Stir in the diced potatoes and pour enough vegetable broth to cover them by about an inch. Bring to a boil.
  5. Once boiling, reduce heat to low and simmer for about 30 minutes until potatoes are fork-tender.
  6. Stir in heavy cream, season with salt and pepper to taste, then serve hot with crusty bread.
