  • 1 medium head cauliflower (about 4 cups florets)
  • 1 whole garlic bulb
  • 2 cups shredded sharp cheddar cheese
  • 1 medium yellow onion (chopped)
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or half-and-half
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until golden brown.
  2. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté for about 5 minutes until translucent.
  3. Add cauliflower florets, salt, and pepper to the pot. Pour in vegetable broth until submerged. Bring to a boil, then lower heat, cover, and simmer for about 10 minutes until tender.
  4. Remove from heat and squeeze roasted garlic into the pot. Blend everything using an immersion blender or regular blender until smooth.
  5. Return blended mixture to low heat and stir in cream and cheddar cheese until melted. Adjust seasoning if necessary.
  6. Serve hot, garnished with extra cheese or croutons if desired.
