  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup quinoa (rinsed)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
  2. Add chicken breasts and pour in the chicken broth to cover them. Season with salt and pepper. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until chicken is cooked through.
  3. Remove chicken from the pot, shred it using two forks, and return it to the pot.
  4. Stir in rinsed quinoa and simmer for another 15 minutes or until quinoa is fluffy.
  5. Add spinach or kale just before serving, allowing them to wilt slightly.
