  • 1 cup carrots, diced
  • 1 medium onion, chopped

  • 6 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions
