Ingredients

Scale
  • 1 lb beef chuck roast
  • 3/4 cup pearl barley
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt & pepper to taste

Instructions

  1. Prepare the ingredients by dicing onions, carrots, celery, and mincing garlic.
  2. In a large pot or Dutch oven, heat oil over medium-high heat and brown the beef on all sides.
  3. Remove the beef and sauté onions, carrots, and celery until softened; add garlic last minute to avoid burning.
  4. Return the beef to the pot with barley, broth, thyme, bay leaves, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for about an hour until barley is tender and beef is fork-tender.
  6. Adjust seasoning as needed before serving hot.
