  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by peeling and dicing sweet potatoes, rinsing chickpeas, and chopping onion and garlic.
  2. Optionally sauté onions and garlic in a skillet over medium heat until fragrant (about 3 minutes).
  3. Place all ingredients into the slow cooker: sweet potatoes, chickpeas, sautéed onions (if prepared), vegetable broth, coconut milk, spices, salt, and pepper.
  4. Cover and cook on low for 6 hours or high for 4 hours until tender.
