  • 2 medium sweet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground cumin

  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling sweet potatoes. Dice them into small cubes. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté onions until translucent (about 5 minutes). Add garlic and ginger; cook for another minute.
  3. Add diced sweet potatoes and vegetable broth to the pot. Bring to a gentle boil, then reduce heat to simmer for about 20 minutes until tender.
  4. Blend the mixture until smooth using a blender or immersion blender.
  5. Return the blended soup to the pot over low heat. Stir in coconut milk, cumin, and nutmeg; cook for another 5 minutes.
  6. Adjust seasoning with salt and pepper before serving.
