Ingredients

Scale
  • 1 lb lean ground turkey
  • 2 cups peeled and diced butternut squash
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (with juices)
  • 1 can (15 oz) kidney beans, rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups vegetable broth or water

Instructions

  1. Prepare the Ingredients: Peel and cube the butternut squash into bite-sized pieces. Chop the onion and mince the garlic.
  2. Sauté the Aromatics: In a large pot over medium heat, add olive oil. Sauté the onion until translucent (about 5 minutes), then add garlic and cook until fragrant (about 1 minute).
  3. Brown the Turkey: Add ground turkey to the pot; cook until no longer pink (about 6-8 minutes), breaking it apart with a spoon.
  4. Add Vegetables & Spices: Stir in butternut squash, diced tomatoes (with juices), chili powder, cumin, salt, and pepper. Mix well.
  5. Simmer: Pour in broth or water until everything is covered by about an inch. Bring to a gentle boil, then reduce heat to low and simmer for at least 30 minutes.
  6. Final Touches: Add rinsed kidney beans; warm through for another 10 minutes. Adjust seasonings as needed before serving.
