  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups spinach or kale
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a large pot over medium heat, drizzle 2 tbsp olive oil. Add onions and garlic; sauté for about 5 minutes until softened.
  3. Stir in carrots and celery; cook for another 5 minutes.
  4. Add canned tomatoes (with juices) and vegetable broth. Bring to a simmer.
  5. Season with thyme, salt, and pepper; add bay leaves. Simmer for about 20 minutes until vegetables are tender.
  6. Stir in spinach or kale just before serving until wilted.
