  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant (about 5 minutes).
  2. Add the diced carrots and celery; cook for another 5 minutes until softened.
  3. Stir in lentils, diced tomatoes, cumin, thyme, bay leaves, salt, and pepper; mix well.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to low and cover; simmer for 30-35 minutes until lentils are tender.
  5. Remove bay leaves before serving. Ladle into bowls and enjoy!
