Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh gnocchi
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme (or basil)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  2. In a large skillet over medium-high heat, heat olive oil. Sear the chicken for 5-6 minutes on each side until golden brown but not fully cooked.
  3. Remove chicken from the skillet. Sauté minced garlic in the same pan until fragrant, then add chicken broth and heavy cream; stir until combined.
  4. Gradually add grated Asiago cheese until melted into a smooth sauce.
  5. Return seared chicken to skillet, then add uncooked gnocchi and any desired vegetables (like spinach). Stir gently to coat.
  6. Transfer everything to a greased baking dish (or leave in skillet if oven-safe) and bake uncovered for 20-25 minutes until chicken is cooked through (165°F/74°C) and gnocchi is tender.
  7. Let it cool slightly before serving; garnish with additional Asiago cheese or fresh herbs.
