  • 8 ounces elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Roast butternut squash drizzled with olive oil for 30-40 minutes until tender.
  2. Cook elbow macaroni in salted water according to package instructions; drain and set aside.
  3. In a saucepan, melt butter over medium heat. Whisk in flour, then gradually add milk while stirring until thickened. Stir in cheddar cheese until melted.
  4. Mash roasted butternut squash and combine it with the cheese sauce, cooked pasta, salt, pepper, and garlic powder.
  5. Transfer mixture to a greased baking dish; top with breadcrumbs and Parmesan.
  6. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
