  • 4 boneless, skinless chicken breasts (about 680g)
  • 6 cloves fresh garlic, minced
  • 500g baby potatoes, halved
  • 1 cup heavy cream (240ml)
  • 1 cup low-sodium chicken broth (240ml)
  • ½ cup grated Parmesan cheese (50g)
  • 2 tablespoons olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts generously with salt and pepper.
  3. In a large skillet over medium heat, add olive oil. Sauté minced garlic for about 1 minute until fragrant.
  4. Add seasoned chicken breasts to the skillet and sear for about 5 minutes on each side until golden brown.
  5. Pour in heavy cream and chicken broth while scraping up any bits from the skillet. Stir in Parmesan cheese until melted.
  6. Place baby potatoes around the chicken in the skillet or transfer everything into the prepared baking dish. Drizzle any remaining sauce over them.
  7. Bake in the oven for about 30 minutes or until bubbling and cooked through.
