  • 12 oz rigatoni pasta
  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup grated fresh parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop garlic and grate parmesan cheese.
  2. Boil salted water in a large pot; cook rigatoni according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then cook for approximately 6-7 minutes per side until golden brown. Remove from skillet and let rest before slicing.
  4. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Pour in heavy cream, stirring continuously before gradually adding grated parmesan until melted and smooth.
  5. Slice the chicken and return it to the skillet along with rigatoni. Toss everything together until well coated.
  6. Serve garnished with extra parmesan if desired.
