  • 6 slices bacon, chopped
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth

  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels, leaving the bacon fat in the pot.
  2. Sauté the diced onion and minced garlic in the bacon fat for about 5 minutes until softened.
  3. Add the diced potatoes and chicken broth; bring to a gentle boil. Reduce heat and simmer for 20 minutes or until potatoes are fork-tender.
  4. Use an immersion blender to puree the soup until smooth (or blend in batches). Stir in heavy cream until combined.
  5. Season with salt and pepper, then mix in shredded cheddar cheese until melted. Serve hot topped with crumbled bacon and sliced green onions.
