Instructions

  1. Peel and chop the potatoes into even chunks. Place them in a large pot filled with salted water and bring to a boil over medium-high heat. Cook until fork-tender, about 15-20 minutes.
  2. Drain the cooked potatoes well in a colander and allow them to steam dry for a few minutes.

  5. Season with salt and pepper to taste, then fold in the chopped parsley and chives.
