  • 4 boneless, skinless chicken breasts (about 680g)
  • 3 cloves fresh garlic, minced
  • 8 oz (225g) fettuccine pasta
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) freshly grated Parmesan cheese
  • 2 cups (60g) fresh spinach
  • ½ cup (75g) sun-dried tomatoes, chopped
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic, sun-dried tomatoes, and spinach.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper. Cook for 6-7 minutes per side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, lower heat slightly and add minced garlic; sauté for about one minute until fragrant. Add sun-dried tomatoes and dried herbs.
  4. Pour in heavy cream while stirring continuously. Simmer gently for about three minutes until slightly thickened. Stir in Parmesan cheese until melted.
  5. Add fresh spinach and stir until wilted—about two minutes.
  6. Combine drained cooked pasta back into the skillet with sliced chicken; toss well to coat in the sauce.
