  • 1 can (14 oz) artichoke hearts, drained
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 cup panko breadcrumbs
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix the drained artichoke hearts, minced garlic, mayonnaise, lemon juice, and half of the Parmesan cheese until creamy.
  3. Gently fold in the panko breadcrumbs, reserving some for topping.
  4. Spoon the mixture into the prepared baking dish and spread evenly.
  5. Top with reserved breadcrumbs and remaining Parmesan cheese.
  6. Bake for 20-25 minutes or until golden brown. Serve warm.
