Crispy Bang Bang Salmon Bites are an irresistible treat that combines flaky salmon with a crunchy panko coating, all drizzled with a zesty bang bang sauce.   • 1 lb skinless, boneless salmon fillets
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the salmon into bite-sized pieces, about 2 inches wide.
  3. Set up a breading station: one bowl with seasoned flour, one with beaten eggs, and the last filled with panko breadcrumbs.
  4. Dip each salmon piece first in the flour, then in the egg mixture, and finally coat it in panko.
  5. Place the breaded bites on the baking sheet, spray lightly with cooking spray, and bake for 12-15 minutes until golden brown.
  6. Drizzle with bang bang sauce made by mixing mayonnaise, sweet chili sauce, and sriracha before serving.
