  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup Monterey Jack)
  • 2 cups cooked chicken or beef, shredded
  • 1 cup diced bell peppers (mixed colors)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cooked chicken or beef, diced bell peppers, shredded cheese, cumin, chili powder, salt, and pepper.
  3. Lay half of the tortillas on the prepared baking sheet and evenly distribute filling on each before folding them in half.
