  • 2 medium zucchinis (about 300g)
  • 1 cup freshly grated Parmesan cheese (100g)
  • 1 cup panko breadcrumbs (90g)
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice zucchinis into fry-like shapes.
  3. In one bowl, beat eggs with a pinch of salt and pepper. In another bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. Dip each zucchini stick into the egg mixture, then coat them in the breadcrumb mixture.
  5. Place the coated zucchini fries on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes until golden brown and crispy.
