  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup tahini paste
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 garlic clove (minced)
  • 24 tbsp water (adjust for consistency)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Remove leaves from cauliflower and slice into 1-inch thick steaks. Place on the baking sheet.
  3. Drizzle olive oil over steaks and season with salt and pepper. Massage seasoning into the cauliflower.
  4. Roast for 25-30 minutes, flipping halfway through for even browning.
  5. While roasting, mix tahini paste, lemon juice, minced garlic, and water in a bowl until smooth; adjust water for desired thickness.
  6. Once roasted, drizzle tahini glaze over cauliflower steaks before serving. Optionally garnish with parsley or sesame seeds.
