  • 20 Biscoff cookies, crushed
  • 5 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix crushed Biscoff cookies with melted butter and press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese and sugar until smooth. Add vanilla and mix again.
  3. Whip heavy cream until soft peaks form and gently fold into the cream cheese mixture.
  4. Pour the filling over the cookie crust and smooth out with a spatula.
  5. Bake for 30-35 minutes until slightly jiggly in the center. Let cool for an hour in the oven, then refrigerate for at least four hours or overnight before serving.
