  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz egg noodles
  • 2 cups fresh mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a large pot of boiling salted water, cook egg noodles until al dente; drain and set aside.
  3. In a skillet over medium heat, melt butter. Sauté sliced mushrooms until tender, then add garlic powder and cook for an additional minute.
  4. Stir in heavy cream and chicken broth; add Parmesan cheese and simmer for about five minutes until slightly thickened.
  5. Combine cooked chicken (diced or shredded), noodles, and creamy mixture in the skillet. Transfer to the baking dish and top with more Parmesan cheese.
  6. Bake uncovered for 20-25 minutes or until bubbly and golden brown.
