  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz linguine pasta
  • 4 tbsp unsalted butter (divided)
  • 3 cloves fresh garlic (minced)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. In a skillet over medium heat, melt 2 tablespoons of butter. Cook chicken until golden brown, about 6 minutes per side. Set aside to rest.
  2. 2. Boil salted water in a large pot and cook linguine according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  3. 3. In the same skillet, add remaining butter and sauté minced garlic for one minute. Pour in heavy cream and chicken broth; stir in herbs.
  4. 4. Slice rested chicken into bite-sized pieces, return to the skillet, and toss with cooked linguine and reserved pasta water until creamy.
