  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup chopped pecans, toasted
  • 2 tsp coffee extract
  • 1 cup whipped cream, lightly sweetened

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of a springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in coffee extract.
  3. Gently fold in chopped pecans.
  4. Pour half the batter over the crust; drizzle with extra coffee extract. Add remaining batter and create swirls using a knife.
  5. Bake for 45-50 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for one hour.
  6. Refrigerate for at least four hours or overnight before serving; top with whipped cream.
