  • 2 ripe avocados, diced
  • 1 cup shredded cheddar cheese
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a medium baking dish with nonstick cooking spray.
  2. In a large bowl, whisk together the eggs, salt, and pepper until well combined.
  3. In a skillet over medium heat, sauté the chopped onion until translucent (about 5 minutes). Add spinach and cook until wilted.
  4. Fold the sautéed veggies into the egg mixture along with diced avocados and half of the shredded cheese.
  5. Pour the mixture into the prepared baking dish and top with remaining cheese. Bake for 30-35 minutes or until set and golden brown on edges.
  6. Let cool for 5 minutes before slicing into squares and serving warm.
