  • 1 package (17.3 oz) puff pastry sheets
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked bacon or sausage, crumbled
  • 1 cup fresh spinach, sautéed
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, scramble the eggs until just set. Stir in crumbled bacon or sausage, shredded cheese, sautéed spinach, salt, and pepper until well combined.
  3. Roll out puff pastry sheets on a floured surface and cut into squares approximately six inches wide.
  4. Spoon filling onto one half of each pastry square. Fold over and seal edges tightly; crimp with a fork if desired.
  5. Beat the additional egg with a splash of water to create an egg wash. Brush over each hand pie.
  6. Bake for 20-25 minutes until golden brown and puffed.
