  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups cauliflower florets
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp honey
  • 3 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a large baking sheet with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, combine cauliflower florets with olive oil, garlic powder, thyme, oregano, salt, and pepper until well coated.
  4. Place seasoned chicken on one side of the baking sheet and scatter the cauliflower on the other side.
  5. Whisk honey and soy sauce together; drizzle half over the chicken and cauliflower.
  6. Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and cauliflower is tender.
