  • 2 cups diced tomatoes (canned or fresh)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 4 cups low-sodium vegetable broth
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
  2. In a skillet over medium heat, sauté the chopped onion and bell peppers in a splash of olive oil until soft (about 5 minutes).
