  • 4 large bell peppers (any color)
  • 1 lb lean ground chicken
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup cooked rice (brown or white)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick spray.
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, sauté onions in olive oil until translucent. Add garlic and cook until fragrant.
  4. Stir in ground chicken; cook until browned. Mix in tomato sauce, cooked rice, salt, pepper, and desired spices. Simmer for 5 minutes.
  5. Stuff each pepper generously with the chicken mixture and place upright in the baking dish.
  6. Cover with foil and bake for 25 minutes. Remove foil, top with cheese, then bake uncovered for an additional 10 minutes until bubbly.
