Ingredients

  • 1 cup quinoa or farro
  • 2 cups butternut squash, peeled and cubed
  • 2 cups kale, chopped (lacinato or curly)
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the quinoa or farro under cold water and cook according to package instructions (about 15 minutes for quinoa, 25 minutes for farro).
  3. Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread it on a baking sheet and roast for about 25 minutes until tender.
  4. In a skillet over medium heat, add the remaining olive oil and sauté the chopped kale until wilted (about 5 minutes). Add maple syrup during the last minute.
  5. Assemble your bowl by layering grains, roasted squash, and sautéed kale.
  6. Serve warm with an optional drizzle of balsamic vinegar.
