  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped

  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

  1. Rinse shrimp under cold water and pat dry. If not already peeled and deveined, do so now.
  2. In a medium bowl, toss shrimp with olive oil, salt, pepper, and lime juice. Let marinate for about 10 minutes.
  3. Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque.
  4. In a large mixing bowl, combine diced avocado, cherry tomatoes, red onion, and cilantro.
  5. Once shrimp are cooked, let cool slightly before adding to the vegetable mix.
  6. Drizzle with additional lime juice and olive oil. Toss gently to combine.
