  • 14 oz firm tofu, cubed
  • 4 cups green cabbage, chopped
  • 1 cup bell peppers, sliced (any color)
  • 1 cup carrots, thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1-inch fresh ginger, grated

Instructions

  1. Press the tofu to remove moisture by wrapping it in paper towels and placing a weight on top for 15 minutes.
  2. Chop the cabbage, bell peppers, carrots, and garlic into even pieces.
  3. Heat 1 tbsp oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden brown on all sides (5-7 minutes). Remove from pan.
  4. In the same skillet, add cabbage first and stir-fry for about 5 minutes until tender yet crunchy. Add garlic and ginger toward the end to avoid burning.
  5. Return tofu to the skillet along with soy sauce and sesame oil; toss everything together for about 2 minutes until well coated.
  6. Serve hot, garnishing with sesame seeds or chopped green onions if desired.
