  • 1 cup dried red beans (or 2 cans)
  • 12 oz smoked sausage (sliced)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 1 green bell pepper (diced)
  • 2 celery stalks (chopped)
  • 2 bay leaves
  • 4 cups water or vegetable broth
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Rinse dried red beans under cold water; if using canned, drain and rinse.
  2. In a large pot over medium heat, add olive oil and sauté onions, garlic, bell pepper, and celery for about 5 minutes until softened.
  3. Add sliced sausage to the pot; cook until browned, approximately 5 minutes.
  4. Stir in the rinsed beans along with bay leaves and enough water or broth to cover by an inch. Bring to a boil, then reduce heat to low.
  5. Cover partially with a lid and let simmer for at least 1 hour, stirring occasionally.
  6. After simmering, taste and adjust seasoning before removing bay leaves. Serve over cooked rice.
