Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 1/2 cup dry white wine (e.g., Pinot Grigio)
  • 2 tbsp freshly squeezed lemon juice
  • 8 oz angel hair pasta
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup water or broth

Instructions

  1. Select the sauté function on your Instant Pot. Melt butter and add minced garlic; sauté for about 1 minute until fragrant.
  2. Pour in the white wine and simmer for another minute to evaporate the alcohol.
  3. Add shrimp, salt, pepper, and lemon juice; stir gently to coat.
  4. Break pasta in half and place it on top of the shrimp mixture without stirring. Pour water or broth over it.
  5. Close the lid securely and set the Instant Pot to high pressure for 3 minutes.
  6. Once cooking is complete, carefully perform a quick release of pressure. Open the lid, serve immediately, drizzling with any remaining sauce.
