  • 3 cups cooked boneless, skinless chicken breast (shredded)
  • 1 cup chopped pecans (lightly toasted)
  • 1 cup diced fresh celery
  • 1 cup halved seedless red grapes
  • ½ cup dried cranberries
  • ½ cup mayonnaise (or Greek yogurt)
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh lemon juice

Instructions

  1. Cook the chicken breasts by poaching or grilling until fully cooked (165°F). Let cool and shred.
  2. In a mixing bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
  3. In a large bowl, combine shredded chicken, chopped pecans, diced celery, grapes, and dried cranberries.
  4. Pour the dressing over the mixture and gently toss until evenly coated.
  5. Cover and chill in the refrigerator for at least one hour before serving.
