  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 can (15 oz) chickpeas, rinsed
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until tender.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add chicken breasts, cumin, paprika, salt, and pepper. Pour in the vegetable broth until all ingredients are submerged. Bring to a gentle boil.
  4. Reduce heat and simmer for 20 minutes. Add rinsed chickpeas and continue to simmer for another 10 minutes.
  5. Remove chicken from the pot once fully cooked (165°F/74°C), shred it with two forks, then return it back to the soup.
  6. Adjust seasoning as needed before serving hot with fresh parsley or croutons.
