  • 1 medium head green cabbage (approx. 2 lbs)
  • 3 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 4 cups stale sourdough bread, cubed
  • ½ cup Caesar dressing (store-bought or homemade)
  • 2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut cabbage into wedges and place on the baking sheet. Drizzle with 2 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes until golden brown.
  3. In another bowl, toss sourdough cubes with remaining olive oil, garlic powder, salt, and pepper. Spread on another baking sheet and toast in the oven for 10-15 minutes until crispy.
  4. Assemble by drizzling roasted cabbage with Caesar dressing, topping with Parmesan cheese and croutons. Finish with lemon juice before serving.
