  • 1 fennel bulb (thinly shaved)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the grapes, then spread them on a parchment-lined baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Toss lightly to coat.
  3. Roast the grapes for 20-25 minutes until blistered and caramelized.
  4. While the grapes roast, shave the fennel bulb using a mandolin or sharp knife.
