  • 9 oz cheese tortellini (fresh or frozen)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp fresh dill (or 2 tsp dried dill)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté the chopped onion and minced garlic until fragrant and translucent (about 5 minutes).
