  • 1 cup white or brown rice
  • 2 tbsp toasted sesame oil
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • 1 tbsp sesame seeds, toasted

Instructions

  1. Cook the rice according to package directions. Rinse until the water runs clear, then simmer in a pot with water for 15-20 minutes. Fluff with a fork.
  2. In a bowl, whisk together soy sauce, sesame oil, minced garlic (optional), and ginger (optional).
  3. Marinate salmon fillets in the sauce for at least 15 minutes.
  4. Preheat oven to 400°F (200°C). Bake marinated salmon on a lined baking sheet for 12-15 minutes until flaky.
  5. Assemble bowls by placing rice at the bottom and topping with salmon. Drizzle with remaining marinade.
  6. Garnish with green onions and toasted sesame seeds before serving.
