  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 ripe avocado, diced
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, sauté onions in olive oil until translucent; add minced garlic for the last minute.
  2. Transfer sautéed onions and garlic to the slow cooker. Add chicken breasts, white beans, chicken broth, cumin, chili powder, lime juice, salt, and pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Shred cooked chicken in the pot before serving.
  5. Ladle chili into bowls and top with diced avocado and an extra squeeze of lime.
