  • 1 cup fresh strawberries (hulled)
  • 1 cup fresh blueberries
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

Instructions

  1. Blend strawberries and blueberries with honey and lemon juice until smooth, leaving some texture.
  2. In a separate bowl, whisk together coconut milk and remaining sweetener until well combined.
  3. Layer one-third of the berry mixture into popsicle molds, then add coconut milk almost to the top.
  4. Insert popsicle sticks and freeze for at least 4 hours or until solid.
  5. To serve, run warm water over the outside of the molds before gently pulling out the pops.
